When you are setting up a trust for NFA items, what do you guys list in the trust to send to the ATF? only your NFA items? if so do you just list it as description of the firearm?

Put whatever you want in there.  If it's not titled property (i.e., there's no document to prove ownership) then write out an assignment of property that says "John Doe, acting as trustee for Trust, hereby transfers title of XXXX item to Trust," and have it witnessed if necessary.  If you set up your trust properly, you can add or remove stuff to the trust assets whenever you want (though I've got mine worded so no trust property can be removed or the trust dissolved if it would break any laws, e.g., if a trustee would then be in illegal possession of assets).  I'm not even convinced that you have to send them an updated Schedule A, as they really have no right to request it in the first place, but they do, because they can do pretty much whatever they want...

In this example, FWIW, I have a normal AR-15 that I built as the trust's first asset, and everything else will be hand written.  My first NFA item is currently in process.

No, NFA items do not get added until the stamp isreceived and the item is in your possession.
