The outside top of the hook on my extractor stands about 62 thousand proud past the lip on my boltface.  This is not an important number, tho.  How well your extractor grabs your cartridge, is.

If you peer into the breech of your rifle, you can see a little arc shaped cutout in the barrel where the proud extractor can go.  The hook is what it is to firmly grab the cartridge, and as long as it doesn't crash/bottom out in the semicircular clearance groove in the barrel, "you're good."

The design is for the extractor hook to stick out a little past the end of the bolt.  It's planned like that.
