You already know what it is - a Spanish Oveido Mauser. It's been sporterized, so its value is pretty low. $150?

I'd go $50 if you are lucky.

Looks like a Century Arms Sporter they were selling back in the mid 80s to early 90s

I started playing around with this last night,  It was not converted to 7.62x51 it is still in the original 7mm mauser,  Is this something that could be a shooter if I found ammo for it?

Finding ammo is easy, Prvi makes loaded 7mm Mauser. AIM has it.

Should shoot fine, assuming the barrel isn't a mess.

You can find ammo, but it won't be cheap.  Long gone are the days when you could find cheap surplus 7mm.  I've only seen it advertised once or twice and it was not cheap then.  I'd love to have a 7mm Mauser but I don't need another caliber to load for.
