I know that it is possible to take a P90 airsoft gun and modify it into a 10/22.

And I know that Ironwood makes a Steyr AUG stock for the 10/22: LINK

But does anyone know if they can make a FS2000 Ruger 10/22, or how hard it would be?

Shouldn't be too difficult, I'd imagine it would be just like doing the PS90.  FS2000's are pretty fat, so you should have plenty of room to work with.  You'd have to cut a hole in the side for the charging handle and ejection port, so it would be a no-go for lefties, but I don't really see any problems.

But on the FS2000 the shells eject out the front near the barrel...

The the charging handle is in a similar place as the FAL/G3 series of rifles.

K.I.S.S. is exactly what the auto bolt release does. It makes it operate kind of like an AR release. The simplification process takes about 5 minutes with a small file. Less with a Dremel. Or you can spend 10 bucks for an aftermarket part already done.    Recent RFC auto bolt release thread

I'm more inclined toward the mainstream design of the Hogue OM. The SG2000 looks really kewl but it's kinda pricey. I don't care for Steyr AUG look. But hey....it's your gun (and money).

I've got the black Hogue stock for my 10/22, it's nice.  Only ~$60 at Brownells, vs. nearly $500 for the AUG stock.
