I'm taking the mag extension off my 870.  My question is, do I need a shorter mag spring now?  If so, what length is standard and can I just cut the one I have?

I'd buy a factory mag spring for a few dollars. Not sure if the spring rates are different or not and that way if you want to put the extension back on you will still have the old spring. Or depending on what kind of extension it is you could sell it to me for next to nothing and make my day.

Yes, your mag extension has a 7 shot spring which is used in both the 2 and 3 round remington extensions.   You need a 4 shot spring now.

The spring you need is part #F19479 and retails for $3.40 however, I recommend you get the police 4 shot spring part #F92447 which also cost $3.40 from Remington.  This will enhance your feed from the magazine tube.  Since they have flat rate shipping grap a few so you have them on hand.

I actually use a factory 9 shot Mossberg 590A1 spring when I run my 870P in 4+1 configuration; yeah Mossberg is really that pathetic when it comes to mag springs.
