What do you guys use for practice in your HD shotguns?

[#1]
100-round value pack bird shot (Don't get the Winchester).

ETA: Its also good for breaking in new guns because of how cheap it is.

100 round Federal bulk packs.  Cheap, low recoil, fine for shooting/breaking in guns.

Hopefully I won't start a major debate here....

Not only would I practice with bird shot # 7/12 or #8, but I'd also use it in any home defense scenario. Granted 00Buck and slugs are more powerful, but for the distance you'll be shooting inside your house bird shot will be more than perfect. Plus with bird shot you don't have to worry nearly as much about harming family members on the opposite of the wall.

Hmm, someone else want to spend their time dealing with this or should I?

Birdshot is for little birds and Buckshot is for the two and four legged deer varieties.

If it won't penetrate a wall it won't penetrate deep enough into tissue to reach vital organs unless it's almost a point blank shot.  Use whatever you want.  People here will criticize you for it but you may want to reconsider your ammunition choice.  If it comes down to you an an armed assailant do you really want your shotgun loaded up with something intended for taking small birds.  You don't even want to use #7 1/2 or #8 for turkey so what makes you think it's adequate for two legged predators?  Just something to think about...
