I have a regular old Rem 870 Express. The barrel is marked 2-3/4" or 3". Can I shoot these 2" low-recoil/reduced load shells or will it fuck up the chamber?

You can shoot them, but the gun will likely not feed them correctly.

Most modern pump guns are designed to feed 2 3/4" and 3" shells.  The short "mini-shells" almost always give feed problems to the point where they just can't be trusted.

I have had ejection issues with 2 inch shells and my 870. I think this is due to the single extractor, because I tested it in my Mossberg 500 and it ejected and fed just fine.

Will they go bang, yes... Will they eject properly every time? Probably not.

I can shoot Aguila mini shells through my 870 if I individually load and remove them.  They won't feed through the magazine (don't lift properly) but they shoot just fine.  It's almost like shooting a .22LR - there's no recoil per se.  It's cool to do.  Practical?  Eh, who cares.  It's a good story and FYI.
