Who does it best?  Not willing to do it myself so I'm thinking of getting it done by a professional which I clearly am not.

If you are talking about bobtailing the frame and not the safety. I  just had my local gunsmith do it, any smith that can build a 1911 can bob it too! He did a great job turn around time was about a month. Cost me 200 bucks and that included re-powder coating the whole frame fresh.

What kind of 1911 do have and what type of grip safety are you looking at? Certain ones may require more fitting and possibly some welding. Lew Bonitz at Grizzly Customs has treated me well.

Well I bought a blued Colt Delta Elite off a member on here and it should be here this week.  I would probably pick up an Ed Brown bobtailed MSH for it if I got it done.  I dunno I'm just doing some thinking.
