What is the largest capacity magazine that I could buy for my Springfield Operator? The largest ive come across is 10.

Anything larger than 10 is completely impractical (look at widebody 1911 types or another firearm). If you are just curious or want something ridiculous as a toy, there are mags ending in a drum that accept 15 rds, 25 rds, and perhaps more (25 is the biggest i know of).

So anything bigger than 10 is just too large to carry?

Absolutely.

The problem is that you either have a mag body that is absurdly long and a weak spring, causing feeding issues, or you have a mag with a drum (which is completely impractical to maneuver, carry as a spare etc), and most of those are of dubious quality as well.

Stick with Wilson Combat 47Ts (my choice) or CMC Powermags for reloads if you want maximum "practical" capacity.

Right. Thanks for the info! I think I'm going to get the Powermag.

+1 for the McCormick 10 rnd Powermag.  Got a couple, love 'em.  You can even carry with one in the gun--they don't stick out that far.

I've seen 2 or 3 manufacturers in my Midway catalog showing 15 rnders, but I have no experience with them.  They do look a bit long though, strictly range fun, if the work.......
