Been thinking about getting a set for a while. Anyone with ivory grips want to recommend spending the money? Who would you recommend?

I have several 1911s. May pick up a ruger someday. That and a birth year government model are my only things 1911 I don't have. Yeah ammo and training.......

Should I jump on the sets on GB for $325 - $350?

They are fragile. Don't shoot the gun with them on.

Nutmeg sports buy from them.

Nutmeg Sports is who you seek.  As far as ivory grips being fragile I think it all depends on the grain and the character of the grips.  A set with a big nerve line right through the grip screw holes will probably crack with repeated use but a set without much grain and figure in them will hold up fine.  I have a relatively plain set that has been on a Colt for over 8,000 rounds and they show no signs of cracking or breakage.  It is more critical that you keep them oiled with vegetable oil and do what you can to minimize shrinkage.  It is the shrinkage while being held firmly by the grip bushings and screws that causes ivory grips to break not the shooting.

ETA:  The dry climate of Kansas, much like Colorado, will not be ideal for the longevity of ivory grips.

A colt delta elite blued with ivory grips would be sexy!

Nutmeg says oil them once a month with either clear vegetable oil or gun oil. And yes, blued 1911's with ivory look really good

Be aware of the Ivory Ban. You will need documentation for any preban panels to prove they were harvested prior to the ban.

I have two pair. One from Nutmeg. No problems shooting with them on. I also have a camel bone set and they are nice and have a substantially lower price point. It will give you a feel for Ivory and then you can make your decision.

Real ivory is brittle.

Get a good fake, they are out there.
