Do you remove material from the safety or the sear?
I've always done the safety, but saw a pic a guy posted and it looked like he had filed on the sear where it contacts the safety, kinda made scense. Ruin the cheap part.

I've always done the safety.
my sears are EGW Hard sears, Ill skip trying to file those.

My Delta has EGW Ambies, I want to replace them with an EGW single, extended one, but needs to be fitted. I might just say "Screw it" and keep the ambies, just have them bead blasted, since he polished the ambies, plus the hammer.

The sear is cheaper, but some sears are too hard to file, and it's an awkward angle to try to file.  

Generally I try to take no more than a moderate amount of metal off the safety.  If a lot of metal needs removal, I'll split the difference so I can keep some meat on the safety.  Apart from anything else, this means you will probably be able to fit a different brand sear later without throwing away the thumb safety.

Fitting a thumb safety is not difficult, though I did ruin the first one I tried to fit The next one went in easy after I figured out what I did wrong. I just finished a PSA 1911 build, I have two, the first one I learned a lot on and I only made twp major mistakes/learning experiences. The other will be a piece of cake!
