... When fitting a KART EZ-Fit® barrel, is there any reason I should not open up the inside-diameter of the slide by roughly 0.014" as opposed to trying to turn the outside-diameter of the bushing by 0.014"?

Because of the offset locking-lug on bushing, the set-up to turn down the OD by 0.014" is challenging.

But I see no reason I cannot open up the bore (ID) of the slide - which is a much easier set-up.

Please advise ...

The first rule of parts fitting is always remove material from the cheapest part.

Leave the slide alone. I usually turn bushing on lathe or turn by hand using mill bastard file.

This.

If you think another bushing is expensive, price out slides.

Unless your fitting a grip saftey.

If you don't have a file that will work for reducing the bushing, this is a great time to go get one.

Not applicable to question.

You fit everything on the grip safety possible before altering the frame.

Since there is no option EXCEPT altering the frame finally, you have to do it.

Given the choice of altering two parts to match, do the cheap one first.

I removed material from the slide on my RIA GI high cap project. I chose to do this because the bore was out of round (big surprise I know). Wanting to know how the stock barrel would perform I machined a bushing to match barrel and slide. Knowing this, and knowing that I would be doing the work does it change anyone's mind. I am capable of machining either piece, but like many opinions.

I learned this the hard way when I filed a frame to fit a grip safety I promptly hated.... The replacement shows a more sizable gap than I would ever have wanted, but at least the gun is reliable.

not all machinists are gunsmiths.
