This is even worse than them chopping M14s and M16s. Both of those have some parts that are NFA, but 1911s can easily be sold surplus.

Exactly why surviving US pistols from the 1911-era are so valuable today. But to the queation, a de-mil'd 1911 would look exactly the same as a functional one. They have some of these in Europe where they can't have the real, functioning article. From what I have seen and heard, the de-mil operation can vary. One gent from the UK told how his only had a piece of steel welded inside the chamber. Otherwise, the pistol could be racked, snapped and taken apart in the normal way. This would be the best way for a de-mil to be found in the USA because all it would take is a new barrel. Some others have more welding which not only blocks the barrel but welds the barrel to the slide. I'd guess most any de-mil'd pistol could be restored to function if you wanted to bad enough.
