As in doublestack.

I know about STI
                   Para-Ordnance
Kimber makes the BP-10 but is that really a 1911?

Who else makes a doublestack mag, hi-cap 1911?

And yes I know the original 1911 design was single stack, and technically a double stack pistol is not a 1911, but you know what I mean.

I thought Wilson made one.   I have an SVI.  I used to have a Les Baer.  Lots of choices.

There used to be an imported 13 or 14 round Isreali model with a polymer frame, but I forget the name.

Kimber also did a a model with a similar (or maybe the same) polymer frame.

Springfield did make a high cap .45, I don't know if they still do but I got mine! This is the only high-cap .45 I have owned but its performance has been flawless. Finding replacement grips is impossible but it does accept para mags which is a plus. I think that I paid around $480 about 2 years ago.

Kimber, Wilson, and Charles-Daly [maybe some others] are all based off the Israeli Bul M-5 frame.

It's a great idea in theory, but they're just too bulky for my hands (I have big hands, but still prefer slim grips on a regular 1911 frame) , too wide to carry easily, mags are too expensive, the most popular guns have things I don't like (para-ordnance and all their quirks), and it's just too heavy to carry.

If you mean Rock Island Armory, I'm Looking hard at that one. The complete pistol is $399 at Sarco - capacity 14 rounds.
Two of those in a yosemite sam rig would be nice.
