My K40 is shooting about an inch and a half left of point of aim at 12 yards or so.  I have heard of how much of a bitch their sights are to remove, but what would be the best approach to drifting the rear sight over just a bit??

They are a tight sight to move.  I have a B&J P500 UNIVERSAL SIGHT TOOL that worked beautiful to shift the sight on my P9.  I would not suggest using a punch and hammer, these sights just seem too tight for this method and you may damage your gun.  Also, most ranges should have someone on site that could drift a sight for little or no $.

Kahr sights can be incredibly tight, and the next one reasonably loose.

You can check and possibly adjust it yourself without harming the gun if you're careful.

Buy a GOOD brass or nylon drift and use a small brass or steel hammer.
Tape up the entire slide except for the rear sight to protect from scratches.
Put the gun on a FIRM bench top that isn't bouncy or rickety or on a good floor.
Put a couple of sheets of newspaper down to further protect the slide.
Have a strong friend hold the slide firmly still while you give the sight a couple of sharp taps with the drift.
Usually, the sight will move, but if it doesn't, STOP, and see a good gunsmith.

I changed the sights on my PM9 myself from the stock Trijicon sights to a Novak.  I took the slide off and used a small wooden block and a engineers hammer (not a framing hammer), put the slide in a vise and wacked away.  It took ALOT of force to move the sights and I started to crack the wooden block but in the end it worked.
