If I want to change the factory rubber wrap around grips for VZ or some other after market grips can I use the same factory grip screws or will I need to get new ones?

Call VZ and ask, they will tell you exactly what is needed. Very helpful people there.

As long as you stay with standard thickness grips, they'll work fine.
Pachmayr grips are better than anything you can put on a 1911 when it comes to function...

I'm OK with the Pachs on my operator, but really liking the VZ slims I put on a 4" baer

The standard screws will work fine with standard thickness grips from any manufacturers. I prefer the VZ ETC Grenade grips.
