What kind of mods can you make to the GI 45? Can you change out he sights?

You can do lots of mods, including changing the sights. However, if you want to trick one out, your gunsmith or machinist will be your new best friend--gotta move a lot of metal to modernize a 1911.

I'm about to start a full house custom on a G.I. models.  Where are you located?  I can show you what can be done, as I'm doing about everything you can do to a 5" 1911.

I am in Arknasas. I am really just interested in changing to a skeletonized trigger & hammer and different sights.

Arkansas?  I wasn't wearing my contacts this morning, and that "AR" looked like "AZ" to me.  If you change to a skeletonized hammer, you will need to change your grip safety to accomodate the lower spur.  You can go to a stock grip safety with a relief cut, like those found on some Springfields and some Colts, or a drop in beavertail, or a custom beavertail that requires cutting of the frame.  

The trigger is no real problem.

There is a vast array of aftermarket sights that drop into the standard rear sight dovetail, or you can get some that will require milling of the slide.  That gets to be a bit pricey, but they make for a nice sight picture.
