Just got a USP compact .40 with meprolights. What sight picture should be used? Seems to be shooting low with the six oclock hold. I was shooting Winchester target ammo(value pack) purchased at Walmart.

I am in the same boat, except I am shooting a USP45F with Meprolites.  I shoot about 2" low with WWB 230gr FMJ.  I shoot about 2" low with Corbon 165gr JHP.  I shoot about 5" low with Double Tap 230gr Gold Dot JHP.  All this shooting was done at 7 yards.  These are all benched (supported) shots.  WTF?  I wish I had some insight for you.

There is your problem. If you find online bullet trajectory you will find that it requires if memory serves me correctly from forensic classes 25 yards for a .45ACP to flatten out to point of aim. Naturally belive it or not, a bullet starts out low like the normal curve or parabellum curve in statistics or any type of bell curve, it starts of low, and then gradually comes up to point of aim and then gradually goes back down the further you get away from the firing line. So take this into advisement, shoot at 15 yards and then again at 25, you will notice a difference, I sighted my USP Tactical in for 15 yars with 230gr winchesters and speer lawman's, then moved it back to 25 yards and It took one little click or so to bring it back up. Its just a matter of trajectory of the bullet. Should be able to search online somewhere for patterns of trajectory and ballistics reports for all the different calibers, I will try to find some and post on here and look up in my forensic ballistics books. Dont get frustrated its not the gun, its YOU! thats the crappy end of the stick. I have been in that boat before.

HK sights in their pistols with a cover up hold instead of the 6:00 hold most Americans like to use.  That is why I switched my Compact sights over to MMC adjustable so I can have the sight picture I want, not the SP HK thinks I should want.  
If you sight not using the dots and have a perfect grip the bullet will hit sort of behind the top edge of the front sight and if you use the dots you will find the bullet will hit behind the front dot or very close.  If you use the 6:00 or pumpkin on a post sight picture your bullets will be striking lower than you expect.

I wish that were my experience. I've found some of the HK pistols I've had are sighted for a 6 o-clock hold at 25y, which amounts to about 4" high at that distance. All the P7s I had were this way as well as the USP9C.

Excuse me for being a handgunning noob but I have no idea what you are talking about with the holds.

I'm willing to be that my shooting would get better if I had a propper grip on my weapon

Picture the target(bullseye) as a large clock face. A six oclock hold would mean that the top of your front sight would be on the six with the rest of the target visible above the front sight. In other words the clock face would be resting on your front sight.
