has anyone ever modified the checkering on their grip or sanded it down to reduce the discomfort? I mean aside from adding the typical hogue grip.

I have added grip tape to make it sharper/rougher on mine. For me, the factory checkering is not sharp enough, but then I prefer sharp, 20LPI metal checkering on most of my 1911s as well.

wow, lol

The checkering is awesome, if you dont shoot a lot of rounds ie 100rds or so.  Once i hit the 250-300 range, my palm looks like it's banged with a meat tenderizer.  

Thank goodness for the Hogue slip.

The rough grip isn't that bad on USP's.  Are you sure it's not somehow shifting around in your handor something?  What calibur are you using?

I've shot my dad's .357 Sig USPC and have never had a problem with the grip, but then again everyone is different.

+2 Never bothered me at all.  In fact, I've considered buying a set of "Decal Grips" from Brownells.  Basically skate board tape that's been precut to the shape of the OEM checkering.

The checkering bothers my hands after about 100-150 rounds as well.

How about some really fine grit sandpaper, and just smooth it down a little?

I would suggest useing a small artist brush and paint the checkering with some black latex paint.  Basically fill in the checkering.  Try it and since it can be easily reversed there is little risk or damage to value or condition.  Sanding will produce a lighter shade to the plastic I suspect turning it grayish as with other plastic parts I have sanded.
