I'm wanting to turn a P250 sub-compact 9mm into a 357sig with a longer grip.

Is such a thing even possible?

yep.  The subcompact slide works on the compact grip module if you saw off one of the front rail sections.  That way you can run the 15rd mag and have the longer grip frame

OP should have no problem finding a full size or even compact .357 conversion kit for a P250. It isn't a high demand item.

Can I put a P320 slide on a P250 trigger/frame?

and where can I find a "short trigger" for a P250?

Can I use a different spring in the trigger group to improve it?

I'd check some sites that stock SIG parts. I've never seen any reduced springs for the P250. Not many spare parts out there, its not a very popular gun.

I purchased several P250 Compact 9mm spare parts kits from SIG for $24/ea. They contain just about every spring in the P250 including a new recoil spring & guide rod:
