I was playing with my 26 for a little while today and noticed something. When I take off the slide the spring isn't seated all the way into the half moon slot. I make sure it is all the way seated correctly and pop the slide back on, then take it back off again and its not seated all the way again. Is this normal? The pistol functions well, no malfunctions. I just don't want to be depending on it and have it mess up if this could be a problem.

Roger that, not a problem at all.  All Glocks do that.

I don't remember it being mentioned in the manual, per se, but it is mentioned in referrence material, such as the Ptooma Referrence guide.

How do I keep the recoil spring assembly seated?

Don't worry, it's not supposed to stay seated. When you re-assemble
your Glock the end of the recoil assembly will fit snugly into the
semicircle cutout in the barrel. During firing it will move down
slightly, into it's correct position. When you disassemble the gun you
will see that it has moved out of the semicircle a little bit. This is
completely normal.

Some helpful info HERE.
