For those of you that have handled/shot both, is there a big difference in the two frames, as much difference as the 21 vs. the 21 SF?

I had a 30 back when, sold it to a friend,  I want another one and since I have a 21 SF, seems the 30 SF is a natural selection...

I've owned them all, and I say there is a noticeable difference. I think the SF will fit a wider range of hands and be more comfortable.

In my medium sized hands the 30 sf feels like a brick in my hand and the 30 feels like a dumb fat brick. The ironic part is that I have proved by shooting them both that I actually shoot the 30 quite a bit better. Who knew?

All guns that you "try" in a store feel different but the proof is how you shoot the thing.

Hand size,strength and a bunch of stuff I likely haven't thought of all play into this thing we call fit

This is absolutely true.     That said, the 30 was my first personal handgun purchase many moons ago.   Back then there was no SF version.   I used what is now called the 'candle method' on mine and got it down to slimmer than SF dimensions.     So, there are other options out there but I'd go SF or just wait for the Gen4.    Either way, they're awesome guns.  This one has over 10k through it with 0, I repeat, 0 failures of any kind.
