On the Glock model 17, is it possible to disable the firearm by a means such as removing the firing pin in order to disable its firing capabilities without inhibiting its other functions. Sort of like a disabled sales floor model.

Ghost used to make an integral striker lock - involved replacing the slide back plate with a keyed unit.

Otherwise, pull the striker and file off the wedge-shaped tip.

I would do something like this. If you did grind the striker I would do something externally to the gun to indicate that its been disabled.

Glock sells a red-framed training version that is disabled.



What you do, sorta depends on what you want to use it for.  Rather than stating what you think the solution is and asking for help with that, you may get better responses if you state WHY you are doing what you are doing.
