I'm looking to use a Classic or Classic Grandmaster in a G34 for IDPA SSP and USPSA Production
What are your experiences?
Which one should i go with?

I thought Vaneks were a no go for USPSA....

The models OP is asking about should be legal for IDPA/SSP and USPSA/Production because they have no external modifications.  Some of the other Vanek triggers trim the safety lever, which is a no-go for these divisions.  However, these would be legal in IDPA/ESP and CDP, as well as USPSA/Limited, L-10, and Open.

I skipped the Vanek and other custom triggers because I was happy with the OEM "-" connector, Jager striker, and Wolff RP striker spring.  I mainly used the Jager striker and RP striker spring to balance against the 13lb recoil spring, but it does lighten up the pull some.

YMMV, but I shoot with a USPSA Production GM that shoots a S&W M&P with a completely stock factory trigger.  That tells me that a trigger won't necessarily make or break you in any of the action pistol sports.
