If there was ever grounds for a modular pistol then this is it. So go with something like the Sig P320, get some different sized shells, different slides, different barrels (with different calibers) and put some different combinations together until you find a few that you satisfied with. Now if someone would build the same modular components for a smaller single stack then it would be ideal but until they do you will have to go with what you can get. Since you specifically said full size then this is a viable option.
My next choice would be a 1911 in 9mm or maybe a Browning hi-power.
I was shooting during the last assault weapons ban and handguns were limited to ten rounds back then. A lot of handguns being sold were double stack magazines with half of the magazine bodies plugged. That didn't make much sense to me. During that time I owned several 1911's but I had trouble getting them to run reliably. I didn't have the time (or the ammo budget) to figure out what the issues were so I finally sold them all and bought a Sig P239 in 40S&W. It was single stack, 7+1 in 40S&W (same capacity as 45 calber 1911) or I could convert it to 9+1 in 9mm. It did a great job until the ban expired and decent handgun magazines became available for the masses again. The P239 is a little on the large size for a 8-10 round handgun but it conceals well and is enjoyable to shoot.
I chose 40S&W because back then we didn't have the confidence in 9mm that people enjoy today.
Some here have alluded to the idea that if you are limited to carrying ten rounds then make sure that they are big ones. I am not sure that I agree, even though I did the same thing in the 90's. If it is a carry gun then it can be designed smaller (therefore conceal better) if it designed for the smaller caliber and still hold ten rounds. Also, having watched my wife and daughter try to shoot my 40's I can see that they have too much recoil for them. I wouldn't go smaller than a 9mm but I see 9mm as a viable option.
