i like the alcohol based strippers when it comes to dealing with commie varnish/stains.

after stripping, boiled linseed oils, tung oil, birchwood casey, minwax polyurethane are all good choices, depending upon the final desired effect and look.

Here is the buttstock on my SAR-1 after refinishing. I used two coats of Tru Oil for color followed by two coats of Tung Oil. For a lighter color just use the Tung Oil after using a stripper like Bix to get all the old finish and stain off and sanding.

Strip the finish, use solvent to remove any residule stain, wash it with soap & water, bleach it and wash it again.....,  that will get it as light in color as that particular piece of wood can get!!!

After the chem strip, a matte finish urethane adds little besides a hard finish. Tung adds more grain detail, semi-hard finish (but harder and lighter than linseed). Formbys makes a Tung Oil Finish with tung and varnish mixed in a low-gloss formula.
Now if you have one of the Romy woods that has the very dark brown finish (like chocolate) getting all the dark out of the grain makes me think of the $60 blonde Bulgy take off sets...
