I am planning a new AK rifle purchase, and would like better accuracy than I am accustomed to. I have a small pile of x39, which to some extent might be the limitation, but I'd like to stick with that caliber.

Would there be any practical difference at 50 or 100 yards between a 16" VEPR or Krebs AK103K?

I realize those are the opposite ends of the scale. ;)

Is there a better choice?

I wouldn't say those two picks are the opposite ends of the scale at all.  I really doubt there would be much difference in accuracy between the two.

IMO, the VEPR is the better pick, but that's just my opinion.

The scale was a weight jab at the VEPR. The Krebs is 7 pounds; the VEPR 9.

Ammo is the big issue assuming a military-quality chrome-lined barrel in excellent condition. Many of us find Yugo surplus M67 to be of higher accuracy than most commercial steel-case on the market, although I am hearing good things about Golden Tiger. Of course the Yugo is corrosive, being genuine military surplus. But, it contains no steel at all. It has a true copper-jacketed lead-core bullet and is in a brass case. I went from 4" at 50 yds with Wolf to 2" with Yugo in my FEG SA85M with the regular iron sights.
Without knowing what AK you now have or what condition its in, it might be better to clean it up and try some better ammo than to go drop bills on a new AK and get the same results with the old Wolf.

I guess I need to accept that ammo probably is a good part of it. Most of it is the Pre-Wolf Russian hollowpoint "hunting ammo" from my mid 90's. I do have a crate of the M67 stashed and some loose boxes of it.

Current guns are a Mini Draco SBR, and a couple Chinese prebans. The polytech I just sold was more accurate than the Norinco bakelite, but the bakelite is nearly pristine and kinda rare so I don't want to shoot it much, much less with corrosive.

That pre-Wolf early '90s non-corrosive is good ammo but is not consistent enough to satisy those who seek better accuracy. That is exactly the same ammo I have a lot of, as I was buying one of those waxed paper 'battle packs' every gun show for years. I also have lots of very recent Wolf in all the varieties, so I really need to test some of that and just blast away with the old stuff. If you have two factory-made Chinese rifles now, I doubt that its possible to find anything better. If you really want to see what they can do, get some USA-made ammo for them, just to see how small of a group you can get. Going from that old Russian to new premium ammo will be like night and day. Hornady makes good ammo and so does Winchester, and there are others I can't think of right now.
Cleaning up after corrosive is not a big deal, but you must do it the same day you shoot. You just make up a spray bottle of 'moose milk' (emulsion of water:Ballistol at 10:1 to 15:1) and literally wash the rifle with it inside and out, bore, gas block, gas tube, everything. Its good for wood and plastic too. Once the water dries away, Ballistol is left behind. Then you can put the gun aside if you wish, but you should follow up with straight Ballistol as your CLP. Its also very important to not forget the muzzle/brake area when washing.

Most of the problems with AK's are the sights.
The sight radius is very short so anything but a perfect hold will throw the group.
A solid scope mount (Beryl) and a decent scope , barring any barrel alignment issures. With
Wolf HP and Uly HP will give you 2-4 inches from a bench rest
I havent had mine out to 100 yard yet ,but 25 yard slow fire 5 shot groups are in a single 1 inch or less hole.
Concentrate on your trigger squeeze and dry practice alot.
The so called experts on the show "triggers" and Tac TV with larry vickors rate the AK good to go out to 200
and 400 yards at man size targets are possible.

There is nothing wrong with the sights if you know how to use them and the site radius is very close to an M4 IIRC.
