Are all AK underfolder assemblies compatible? Specifically, will a Polish underfolder stock fit on a type 56 (that has the receiver for an underfolder)?

No. You need a Chinese stock.

Chinese have the angled underfolders, Polish are straight.
Chinese stamped AKs have 1.5mm thick receivers, Polish are 1.0mm thick.
Not gonna work.

The stock on a Chinese underfolder angles down when open.
The stock on a Polish rifle is in line with the bore when open.
