Ok so im new at this and just got setup for building. My question regarding the rear trunion for a bulgarian left side folder.

On the inside of the receiver do the rivets need to be domed with the doming arm on an ak builder jig or are they supposed to be smushed flat, or does it matter?

Doesn't matter functionally. Just depends on how "correct" you want to be.

There's no one place to find information like that. It takes a lot of research to really find everything. But flat would be correct for your Bulgarian. However, there could be certain years that they did use rounded. But I doubt it.

I have been practicing and getting about 50% success. One will dome nice and the next one will fold to one side.

Try adding a little molyd grease to the tail. I've noticed that helps keep the rivet from folding when doing the long rivets on the rear trunnion, so it may help in this application as well.

I actually did start trying but have only done it a couple of times with good results. I didn't have grease I used never seize.
