I'm new to this gun and am wondering what the procedure is to switch barrels? Does it make sense to have 2 different barrels for 2 different purposes, or would it be much better to have 2 different uppers?

Without a doubt, it is much easier to have two complete uppers (barrel, bolt, carrier, charging handle in each).
Pop two pins and swap them whenever you want. Takes 10 seconds. No tools required & no need to re-zero.
