Are black oxide roll pins ok to pin an adjustable stock or should they be stainless?

Buy what you can or want. A drop of oil on the pin will keep it free of rust.

Yeah, there are pins all over the AR and rust is not a common issue with them.
Use a common hardware store roll pin or solid pin.
