If you were to build a rig designated for a caliber other than 5.56/.223 what would you pick and why?

.300Blk suppressed

Quiet, subsonic ammo cycles, accurate, easy to reload and packs a punch

6.8 SPC2, for sure (check out 68forums dot com).  It has the best balance of power and range from short barrels.  The 6.5G needs a longer barrel to come up to speed.  The .300BO has the short barrel power, but fall short in the range department.  The .277 caliber was selected by people from the Army's 5th SF Group as the best balance between small caliber/long range and large caliber/short barrel. - CW

308, just for ammo selection and availability alone.  The 300 is promising due to just needing a barrel as all the other parts are standard.

If you reload and what something with more power for say Deer or Hog's.... I would start with a .223/5.56 based wildcat like the  6x45mm/6mm-223 a very easy round to convert.
You also have the 25-223 that is pretty popular here, then there is my personal favorite the 6.5mm PCC (a 6.8mm version is in the works), moving on from there is the .300 BLK,
and finally the 7.62x40mm Wilson Tactical also one of my favorites. The 6.5mm PCC has the best trajectory of those rounds here and ties with the x40mm for Energy/Power levels
and beats the x40mm past 200 yards...The .223 based rounds use standard .223/5.56 components and mags (for the most part with the mags), no need for specific bolts or mags.
Overall the .223 based are very economical to shoot if you reload...

If you don't reload, you do have the 6.5 Grendel and 6.8 SPC both very good rounds, with the Grendel slight advantage at longer distances...

Then you have the big bores like the .458 SOCOM, .450 Bushmaster, and the .50 Beowulf with the big bore price tags...

There are others, but the ones mentioned above are the most common rifle rounds that are larger than .223/5.56 caliber...

Good Luck.
