I took the front sight/gas block off my colt 6721 to install a Larue rail and noticed that some of the finish is missing. I am putting the original gas block back on. Should I paint this surface before re-assembly or not? What is the best product to use, aluma-hyde?

Id use nothing, but oil to help in sliding the parts back.

I believe that is removed intentionally for proper size and a good gas seal. Just ignore it. If you change to a short gas block that leaves one side exposed, maybe use stove black or I like VHT brake caliper paint.

ETA- Install first then paint, or the gas block may not slide over the paint.

Cold blue would only take a couple of minutes and do a pretty good job of hiding the unfinished steel.  Use 0000 steel wool to blend it with the original finish.

just keep an eye on the section to see if you have any gas leak,I wouldn't worry about it,the lack of any park/anodize that is.Just make sure whatever you put on that it doesn't leak

Colt parks under the fsb. or at least everyone says so.

when you say "some of the finish is missing" do you mean ALL of the finish under the fsb, or a couple places under the fsb? as in 2 ringa around the barrel?
your colt should have been parked under the fsb.
its really not a big deal, either way,cold blue (black) should re coat without much increase in dimension.

Plus one.  Then oil the area.
Who cares it's under the FSB.  Don't use  paint or you'll be  reposting that it won't fit back on
