When purchasing the buttstocks seperately, I know they pretty much always come with the buffer tube and spring. But do they come with the castle nut and (I forget the name) piece that goes between the receiver and the buttstock?

a complete stock kit will come with:
buffer spring receiver extension castle nut end plate

Dont forget you have a choice in tubes
Mill spec = smaller diameter with rolled threads = stronger but costs more
Comercial = larger diameter with cut threads = cheaper
