what can i use to put a nice matte black r grey finnish on a stainless barrel? I want it to be durableand i would rather not have to bake it . But if i have to bake on I will. thanks for the info

You could use duracoat and let it sit to cure for a couple of weeks.

Norrells has a new finish that doesn't need to be thermal cured.
