I was wondering if you can change the bolt in an AR or does it have to specifically be for that rifle? Headspace?

You should be able to just change the bolt.

I guess it wouldn't hurt to check it, but the bolt it's self is not the determining factor in head space. As long as the bolt is per spec it should be fine.
