the two key issues are the temperature and humidity. Then, the really big issue is keeping both of these fairly constant.

I'd say in Jersey, you have humid summers and cold damp winters, no?

I would build something to handle the Army ammo cans with the rubber seals. Pop a dessicant pak in each one––you're good to go.

How you store these––your call. Shelving, cabinet, wall-mount (they get awful heavy!) etc.

I think people get a little paranoid about ammo storage requirements.  Most of the centerfire ammo out there will last a long time with a minimum of care in storage.  I have never used dessicant in my ammo cans.  The only ammo I have in cans is what came in them to begin with.  I just open the case and use out of it until it is gone.  I have a case of Turkish 8mm Mauser from the 1941 that I am sure sat in a military bunker through hot summers and cold winters with the original seal broken for what appears to have been a very long time.  It is some of the most accurate, consistent, clean, and reliable ammo I have ever fired.  Most ammo will last longer than you with just a minimum of care such as not getting it wet or contaminated with oils or chemicals.  I have fired many boxes of ammo from the 60's and 70's that had been stored in an old shed or garage through many hot and humid Missouri summers and cold winters and as long as the cases weren't corroded were good to go and surefire.  If the ammo is your SHTF stash I wouldn't intentionaly abuse it, but I believe all that is necessary is to keep it in a cool dry place away from harsh chemical vapors ahd you should be fine.  If you have the extra time and money to repack your ammo into cans with dessicant I guess it wouldn't hurt, but I have never found it necessary.
