Built my first AR Pistol a few months ago. The first upper I completed is a 7.5 223 Wylde, works great, functions well with no problems. Just finished my second upper this past weekend, an 8.5 300BLK. It seems to function well other than the brass is clipping me in the cheek and flying over my right shoulder, by the way I am blind in my right eye so I shoot left handed. Where should I start to try and get the brass to eject at or around 90 degrees. Any suggestions will be greatly appreciated, thanks!

Might be easiest to use a brass catcher to solve the issue. Here's probably one of the better ones.

What weight buffer are you running in it?

U could try a small strip of velcro on the shell deflector maybe the soft fuzzy side.  I have no idea if it will work or not but its cheap and u might have some laying around the house.  Besides that u could buy one of these.  http://www.brownells.com/shooting-accessories/range-gear/shell-catchers-deflectors/brass-deflector-prod18554.aspx  I also found this pic it might help

Standard carbine buffer.

I had the same problem with a carbine using an A1 upper. Cut one coil off of the ejector spring. It fixed the problem and is now spitting the brass out at a 45 degree angle.
