Curious about the level of difficulty, how hard are these to install?

Plenty of info here to help and just take your time, hide the dremel tool, and you can do it. Read and study here a bit first and you will be surprised how easy it really is.

if your careful and follow the directions that are in the "build it your self" section, it should take you no more than 25 min tops.

Easy to very easy.  Just take your time.  Get a roll pin punch set, and read the tutorials.  Watch the takedown pin detents!

I installed my first one this summer in about 30 min with no problems.  I bought the punch sets (standard and roll pin) and only used one standard punch (dont remember the size), but it was probably good to have them around.

Hold the front detent/spring down with a razor blade.  Very simple, and that's probably the most difficult part!

I always do the front pin in a ziploc bag, that way when I launch the pin the first dozen or so times I dont have to dig in the drawer for a new one.
