So I have a midlength and I want to put a CTR on it.  I keep reading that "carbines need a stronger spring because of pressure issues."  Does this mean that I should NOT get a buffer tube set that says it's for carbines?

I was thinking of getting this tube set unless someone can suggest something better:

Also, my other rifle has an old 6 position M4 stock, but all I seem to be able to find nowadays is 5 position tubes, any idea why this is?

The carbine buffer and spring will be fine.  I run one on my middy with a 9mm buffer and haven't had a hick-up.

I have an H buffer in one middy(worked fine with a carbine buffer also) and a A1 stock with a rifle buffer in another middy. Both have worked with out issues(including 90 rounds of Brown Bear each)

The CTR stock kit should work just fine.
