What the difference between a bolt buffer for the carbine and the rifle?  Are they interchangeable?  I just want one to have a spare on hand for my three carbines.

Rifle buffer is longer than a carbine one. Same with the buffer spring. They are not interchangeable.

I've put the smaller buffer into a rifle and it function fine. You just cant put the longer buffer in a carbine.

Not smart.  The tail of the buffer has that plastic piece that bottoms out on the end of the R.E.  If that can't bottom out before you spring completely compresses, you're going to fuck up the buffer spring.  You'd be compressing the buffer spring beyond it's design and beating the shit out of it.

I can't believe someone would even try this.

In addition to being an incredibly bad idea, if you have the rifle R.E. anyway, the rifle buffer and spring is the MORE RELIABLE system to run.  There's nothing to be gained by this nonsense.
