So long as they are the same caliber, yes they are the same.  You should keep the bolt 'matched' with a barrel because swapping them between barrels can cause additional wear.

Yes, but you really shouldn't swap around used bolts between guns.  They wear into the rifle the more they shoot and you can adversely affect head spacing if you switch a used bolt into another gun.  Putting a new one into a gun isn't as big a deal but you should really check head space also.  Also not all bolts are created equal when it comes to quality.

Just don't put in an old bolt with an old barrel.

New bolt/new barrel - ok
New bolt/old barrel - ok
Old bolt/new barrel - ok
Old bolt/old barrel - bad (potential headspace issues if something is worn), assuming they weren't used together, that is.  You can certainly shoot your old bolt in your old upper if they came together new.

At least that's what I read on here.

On the Headspace guages, is there a difference between .223 and 5.56 guages?

All my rifles are 5.56 chambers all I use is a field service headspace guage nsn 4933-00-070-7814.

Yes, there is a difference in the gages.

You don't need a full set of gages unless you really want them.  A field so you can make sure it hasn't eroded too far is enough.
