Just installed an adjustable stock in an  Olympia 16 inch carbine: everything went fine. However now when  I pull back  the charging handle the retainer pin and the spring  that hold the  buffer assembly  in come out of their little hole in the lower receiver.  What did i screw up?

When installing the buffer tube, you must thread the tube in enough to hold the buffer retainer down.  You only want the pin-like projection (that holds the buffer back) to be up enough to retain the buffer.  

The trick to this is to thead the buffer over the body of the retainer till it stops against the top projection, then unthread to line up TDC of the tube, then bring the castle nut into play.

That would be the way to do it!  Be carefull when unscrewing the stock, the spring and detent have a habit of flying across the room.
