At our dep't, you call one of the sector houses or the Chief's office and they schedule you for a ride-along.  On the appointed time and date, you show up and go for a ride with the officer(s).  If you're a friend of an officer, the officer can also schedule it.
We usually tell our ride-alongs to get out with us on runs, car stops, etc. but not to get between us and whoever we are dealing with for their own safety.

My department requires you to come in and fill out a card with your information on it, and after a quick records check a date and time is scheduled. There is an option of choosing who you want to ride with, but they are limited to 3 a year.

I guess living in a small town with a small department (4 full time, 1 part time) it's a little different. If I want I just walk up and say can I ride for a while, and the other night I was talking to the officer on duty and he got dispatched to a call and just said "If your not doing anything, get in and go with me".
