Now I'm a total noob when it comes to cooking beans. I've had my beans soaking since 11pm, now my wife unit wants to go out to eat tonight. Even though if I pitch the beans out, I'm out like $1.50, I'd rather just save them and cook them tomorrow. Is it ok to soak beans for 48 hours or will they be ruined? |

When cooking beans I actually let mine soak for 2-3 days. There will be some bubbles on top, with a yeasty odor, but just rinse them off and you'll be good to go. In fact, when you soak them longer, it supposedly breaks down whatever it is in beans that makes you gassy. Could be true since doing long soaks, my chili (yes, I put beans in me chili and I don't care TX arfcommers) doesn't give me any gas.

I cook beans about twice a month and will commonly let them soak for 3 days. Only time I've seen sprouting was when I let a batch go for 4 days, unrefrigerated. |
