Everyone talks about groups for rifle/pistol accuracy... how do you gauge accuracy/precision with a shotgun?

They're called patterns if you're shooting shot.

Not sure what else to say. For defensive/combat use, you would normally want the pattern as tight as it can be but you can't use chokes because you may want to shoot slugs. For game hunting, you want a pattern that covers as much area as you can at the range you want to shoot while still having adequate density to ensure clean kills. People will typically experiment with different chokes and paper targets at the range they expect to shoot.

At 15yds , Hornady TAP 00 Buck groups the size of a softball from my 870.  I can hit COM at 100yds with slugs.

Works for me.
