Chicken and Eggpant Parmesan.
Starting with fresh Tomatos, Eggplant, Onions and Basil from our garden. Homemade garlic and onion Marinara. 
Eggplant sliced. Chicken breast pounded flat. Dipped in flour, then an egg, milk, sour cream mix and then coated with Progresso Italian style bread crumbs and grated Parmesan cheese. 
Fried golden brown in olive oil, then placed in a pyrex baking dish. Sauce and Mozzarella/Provolone added on top and baked in oven. 
The reward. With Mossberg 590, Para Ord P12, Ontario Knife Co. combat fighter.
