I'm making some ghetto yellow rice.  Yellow Rice is the staple dish of Puerto Rico.

First you start by heating a little bit of olive oil in a sauce pan, then toasting some rice.  Try to find the shortest grain of rice you can, the long grain varieties have too much starch and make the rice sticky.  The idea is for the rice to be fluffy.  Also when toasting, you want the kernel to turn from a translucent state into a white opaque state.

Here's the "secret" ingredients.  If you want to make a more authentic yellow rice, get a can of pigeon peas if you can find them and some ham.  Lentils are pretty close to pigeon peas, so those should work fine.  You can also make your own sofrito, it's a cooking base used in pretty much every Puerto Rican dish.  It's really similar to salsa, except they use more bell peppers than tomato, and it's pureed.

After the rice has toasted, add some water.  The trick I've found is to add about a quarter to a half inch of water over the level of the rice.


The red stuff is sofrito.


Added some hot dogs because I'm too poor/lazy to go to the store and get some ham and pigeon peas.


Add a packet of sazon, give it a quick stir and cover.


Put the lid on and bring to a boil.


Once it's up to a boil, turn down the temperature a little so it can simmer for about 20 minutes.  It's VERY important not to remove the cover during this time for whatever reason.  Also use the most tight fitting lid you have.

It's a lot more orange that it should be because I used too much sazon.  But this is what you're rewarded with if you did everything right.

I give you a 8/10 on the preparation.  I'm sure far worse than hot dogs has been used, but daggone, man!

Hot dogs in anything but a chili dog = fail. Note- I have never seen beans on a chili dog, even when up in yankee lands. Pure dee proof. WJ

I hate to be harsh on people because I enjoy the dinner/lunch threads but that's a total FAIL.

I'm a yankee and I eat beans in/on chili dogs all the time. I just posted about it in Old_Painless's thread for the Sante Fe Soup.

I think that rice looks damn good and that's one thing I miss about living in the ghetto in MA, my neighbors making me delicous meals like this. Funny too cause I was just noticing the same Goya products (base and sazon) you used the other day at the grocery store and wanted to get them but didn't know what to use them for. Now I know.
