Smoke slow for about 2 hrs., turn up heat to low and cook thourougly during cooking I sprinkle with everglades seasoning and seminole swamp seasoning, keep turning. The meat will tense up.. when it relaxes and starrts to fall apart it is done. Mix some honey with some Stubbs BBQ sauce and brush it on, cook some more, when that bakes on flip and do it again.. baste and slop about 3 times. Turn up heat and sear it quick. move to plate and enjoy. |

Thats why it looks "rusty" I always do, it's not "rust" it is the brass under the chrome showing through from being scrubbed with scotchbrite, bleach and soap. I've about scrubbed the plating off..
