I have been looking at surplus ammo and noticed ammo in different primer flavors, berdan and boxer primer. What is the difference?

Without going into too much detail, berdan primers are for single use, and are, for practical purposes, non reloadable. Boxer primers are easily removed and replaced to allow reloading of brass cases.
